Sully’s elevated dining is cool but casual

SULLY’S Rooftop Restaurant & Bar is the height of cool at the newly opened Avani Mooloolaba Beach Hotel.
Head to the 12th floor to dine out on the 180-degree panorama over the rooftops of other hotels, across to Mooloolaba Beach and Point Cartwright, north to Mt Coolum.
From the comfortable outdoor seating to the ‘very Sunshine Coast’ décor inside, guests can find their private space for poolside grazing, long lunches, sunset drinks and celebratory dinners.
Kenneth Wagner, managing director of KPAT Hotels, describes the feel-good vibe of the restaurant as “premium casual – everyone is welcome”.
Sully’s executive chef, South African-born Marky Godbeer, who has worked in kitchens all over the world, ensures his menu is just as welcoming.
Perhaps start with a ‘goblet’ of mixed olives, followed by any of the artisanal flatbreads – truffle honey butter and pecorino; whipped ricotta, garden peas and lemon; or prosciutto, stretched cheese and pink peppercorn. Next, maybe the passionfruit, salmon caviar and finger lime oysters, plus a lime-cured Mooloolaba yellowfin salad with green apple, cucumber and jalapeno crema will appeal.
Then, try a cheeky ‘Bunnings sausage’: a smoked wagyu beef snag in a milk bun with caramelised onion and bone marrow aioli; or tender calamari with a plum vinegar, caramel and lemon dipping sauce.
The mains are next level, including chargrilled chicken skewer (whipped garlic, cumin brown butter and pickled onion); pork and prawn schnitty (fennel slaw, candied almond and nduja lemon butter); and woodfired oyster-cut Magra lamb shoulder (goat curd, mint, garden pea, pickled onion). If you can’t fit in a dessert such as the highly recommended Cherry Ripe, be tempted with a seasonal sgroppino (melted lemon sorbet cocktail with vodka and champagne) prepared tableside.
The menu is described as “a relaxed yet elevated dining experience that captures the energy, flavour and rhythm of the Sunshine Coast”. It certainly succeeds.
